Vegetables for Breakfast NOW by Nancy Wolfson-Moche (@Nancy_Moche)
- Nancy is a nourishment counselor and educator. Eating vegetables for breakfast will change the way your body deals with food. Walnuts, kale, and green tea for breakfast can keep you going until lunch. One vegetable in each meal can balance many aspects of what food delivers. Whole grains contain the whole plant. Vegetables contain only part of the plant (root, leaf, seed, eg.) Crunchy is good. Raw is ok but raw food is a bit harder to digest. Nancy suggests that you blanche, water sauté, or steam your vegetables. Go for a variety of locally grown vegetables. Squeeze fresh citrus, soy, or vinegar on your vegetables and chew them well.
